C.S.A. Beef Shares and Packages

Kelley Beef is operated by Dennis Kelley of, Rainbow Ranch Farms.

Pastured and grass fed, heritage cattle breeds make for a flavor filled and nutritious lean beef. Kelley Beef cattle are naturally lean and are grown for superior flavor and nutritional value.

Kelley Beef heritage, free range, pastured cattle range in weight from 600-700lbs – once dressed the cattle can lose almost ½ the live weight in skin, blood, entrails, stomach, compartments, head, hoofs and body fluids. The carcass is then weighed for “hanging weight”. While the beef carcass is being cooled, processed, hand carved, cut and packaged, the carcass can lose an additional 25% -35%.

Beef selections are made from heritage breeds, such as, Irish heritage breeds, heritage Dexter, Classic breeds, Holstein, Jersey, American Lowlines, Lowline Angus (Not Hybrid), English heritage breeds, Lowline Hereford, Limosin, French heritage breeds, Maine Anjou, Charolais and heritage crosses.

All the cuts are packaged in easy to manage packages, wrapped in frost-free, lined butcher paper to maintain freshness. The roasts are a few pounds each, and the hamburger, ground and kabob/stew is approximately one pound each.

From 1 Whole Beef, approximately 25% of the cuts are Steaks, 25% are Roasts, 40% are Ground Beef, and the remaining 10% is Stew Meat, Short Ribs and brisket.

Each individual heritage cattle is different by way of size, weight, age and breed, no 2 cattle can be processed to yield the exact amount of cuts.

Amounts, types and weights of each cut, depend on the weight and size of individual cattle. You will get a variety of steaks, roasts, ribs, ground and stew. It is not possible to guarantee specific cuts.

Cuts and Butchers

Kelley Beef works closely with several experienced, highly skilled butchers, to make every ounze of meat count, with very little waste.

Dennis Kelley has carefully selected butchers to custom hand carve, each piece of beef to meet the maximum and highest quality results.

Our custom beef-cutting methods are specific to pastured, lowline & heritage breeds. Our cutting methods produce higher yeild per lb and less waste and trim.

A-La-Cart Custom Orders And Specific Cuts

Roasts are cut to about 2.5-3.0lbs each, (your order needs to exceed 2.0lbs on roasts), Steaks are cut about 1/2" - 3/4" thick, ground and stew are packaged in 1.0lb packages.

All (but 2) Kelley Beef cuts are the same price, roasts, ground, stew, steaks, ribs etc.. simply write in your desired cut (7-Bone Roast or Porterhouse Steak) and how many pounds (6.0lbs or 8.0lbs).

ABOUT BEEF

A special added bonus: To maintain the tenderness, quality, nutritional properties and flavor, our beef is fresh (not dry-aged).

Aging and dry aging is needed when processing old, out-of-production cattle to tenderize the carcass We do not process any cattle over 30 months old.

Our cattle are pastured and grass fed properly and we process at appropriate ages and hand carved by highly skilled, state certified, professional butchers.

Fresh beef allows naturally occurring enzymes to remain intact to naturally tenderize while preserving the entire intense delicious flavor and maintaining all healthy nutritional values.

Our fresh beef is chilled to 29-33 degrees and places all the nutritional values, proteins, fats and enzymes in suspended animation for absolute perfection, until ready to be prepared. No sub zero deep freezing!

Heritage grass fed and/or pastured/grazed beef have been shown to contain more zinc and vitamin B12 than grain-fed beef, less total fat than grain-fed beef, and greater amounts of omega-3 fatty acids and CLA (Conjugated Linoleic Acid).

ANY and ALL grain-feeding can cause formation of gas, acidosis and improper rumen activity in the digestive tract of the cow and pose serious health risks. Grain feeding is usually accompanied with low levels of antibiotics and digestive aids. When cows are given the opportunity to follow a diet composed of their natural, intended grasses and foods, they are healthy.

Meats, such as pork, lamb, goat, beef and poultry do NOT freeze at 32 degrees F, water does. Meats begin to freeze at temperatures below 27 degrees F.

Our meats are fresh-chilled immediately upon final packaging, 29-33 degrees F for 12 hours, prior to farm pick-up. We offer the freshest meats on today's market, guaranteed, and with NO preservatives.
